Mint Thins  

If you have followed me for some time you will know that i am a huge advocate for oats! Full of fibre, b vitamins and help to keep you full for longer. I am sure you will love these cookies that are so quick and easy to make. 

I like to add in a couple tbsp of my glowing skin choc blend to really up the goodness of these! 

¾ cup oat flour

½ cup brown rice flour

½ cup cocoa powder

¾ cup rapadura sugar or coconut sugar 

1 tsp vanilla

100g butter or olivani

1 tbsp milk


Chocolate

100g dark chocolate

3-5 drops peppermint essence

Instructions
Turn the oven onto 170 degrees on bake.
Line a baking tray with baking paper.
Soften the butter or olivani slightly.
Add the flour, sugar and cocoa into the wet mix and mix well. (You may need to use
your hands to combine well).
Place in the fridge for five minutes to harden.
Place the cookie dough in between two sheets of baking paper and
roll out with a rolling pin until around 2-3mm thick.
Cut into circles with a cookie cutter or a cup

Carefully place the cookies onto the baking tray.
Bake for 10 minutes or until they look cooked.
Leave to cool.
Melt the chocolate in a heatproof bowl over top of a pot of hot water.
Add in the peppermint essence.
Drizzle over the cooled cookies.
Enjoy!
Note: These cookies will be delicate while still warm. They will form up once cooled.
