Christmas white chocolate fudge

This delicious slice is everything a Christmas slice should be! White chocolate, cranberries and fudgey! Super easy to whip up. A one bowl wonder. If you want a dairy free option you could find a vegan white chocolate or use a dark chocolate instead. This one is gluten free also!

 


BASE

1.5 cups ground almonds

1.5 cups coconut

¼ cup ground flaxseed

¼ cup cranberries

100g melted butter or coconut oil

1/4 cup liquid sweetener such as rice syrup, honey or maple


CHOCOLATE

150g white chocolate

1 tsp freeze dried strawberry powder


Add the base ingredients into a bowl

Add in the butter and sweetener and mix until combined

Line a 20x20 baking tin with baking paper and press the mixture into the tin

Place in the freezer while you prepare the chocolate

Place the chocolate in a heat proof bowl and place over a pot of hot water. Stir until melted

Cut the slice into bite sized pieces or leave as whole if desired

Dip the pieces into the chocolate or drizzle over the top. Sprinkle with the cranberry powder

Place in the fridge to set
